
On Thursday, June 11, the Allspice Café hosted the Knoxville Area Healthcare Iron Chef Competition. The competition included chefs from several local hospitals. The winning recipe was created by The University of Tennessee Medical Center’s Executive Chef Mark McKinney with his Chipotle Black Bean and Goat Cheese Quesadilla with Corn Relish recipe.
The group was challenged to create, prepare and serve a healthy and tasty recipe utilizing the line of Morningstar Farms vegetable burgers. Each chef was required to develop three different recipes utilizing one of the vegetable burgers. A panel of judges evaluated each product based on nutritional value, appearance, creativity and taste.
The competition was sponsored by Morrison Healthcare Food Services and Kellogg's.
