Catfish Parmesan

½ cup grated, reduced-fat parmesan cheese
¼ cup flour
½ t pepper
1 t paprika
2 pounds catfish fillets, skinless
2-3 egg whites
2 T trans-free margarine, melted

1. In a medium sized bowl, combine parmesan cheese, flour and seasonings. In a separate bowl, beat egg whites. Dip catfish in egg whites then coat with cheese mixture.

2. Place fish in baking dish sprayed with cooking spray. Pour margarine over catfish and bake at 400 degrees until golden brown and fish flakes when tested with a fork, approx. 15 to 20 minutes.
