1 lb. European salad (or other packaged salad mix)
1 Tomato - diced
1 Cucumber - diced
2 carrots, shredded
½ red pepper, diced
2 ½ Tbs olive oil
1 ½ Tbs. red wine vinegar
1 ½ tsp Dijon mustard
1 clove garlic, minced
- Place vegetables in a salad bowl. (Use any combination of fresh cut vegetables).
- Combine remaining ingredients in a jar with a tight-fitting lid.
- Season with pepper to taste and shake vigorously.
- Pour dressing over salad and toss.
