Egg Custard

Submitted through the Cancer Institute, this custard is a mild, soothing dish. It is a good source of protein, and if you use whole milk or cream, it also is high calorie. Custard tastes good served hot or cold. If smells bother you, cold custard is a good thing to try, since it is so mild and does not smell strongly.

1/3 cup sugar 
3 eggs 
2 ½ cups milk 
1 tsp vanilla 
dash of salt 
nutmeg 

Preheat oven to 350 degrees. Mix the eggs, sugar and dash of salt. Scald the milk. Pour the milk into the egg mixture while stirring. Add the vanilla and mix well. Pour into ovenproof cups and sprinkle nutmeg on top, if desired. Place cups in a pan of water in the oven and bake for 45-50 minutes or until knife comes out clean when inserted in the custard. Serve warm or chilled.
