Fresh Potato Salad

1 pound red new potatoes, scrubbed
½ t. salt
¼ cup nonfat mayonnaise
½ cup nonfat sour cream
1 ½ t Dijon mustard
1 T. sweet pickle relish
1 T. chopped fresh parsley
¼ t. ground white pepper
½ cup sliced green onions
½ cup frozen edamame
¼ cup finely diced carrot
¼ cup diced red bell pepper
¼ cup finely diced celery
1 hardboiled omega-3 egg, chopped

In a saucepan, cover potatoes with water, add salt, bring to boil. Turn down the heat & boil gently until tender when pierced, about 20 minutes. Drain, cool, then quarter potatoes.

Mix together mayonnaise, sour cream, mustard, and pickle relish. Toss with potatoes. Add parsley, pepper, vegetables, & egg. Toss together thoroughly. Taste. Adjust seasonings and serve.
