Serving Size: ½ cup
1 (15 oz.) can black beans, drained and rinsed
1 (11 oz) can corn – no added salt
1 (15 oz) can diced tomatoes – no added salt
½ cup diced orange bell pepper
1 diced jalapeño pepper
¼ cup diced red onion or green onion
3 Tablespoons chopped fresh cilantro
2 Tablespoons red wine vinegar
Juice from 1 fresh lime
1 teaspoon cumin
1 Tablespoon olive oil
Black pepper to taste
Mix all ingredients together and serve. This is a great recipe to make the night before.
Serve with Home-Baked Tortilla Chips.
