Pumpkin Mousse Tarts

1 15 oz. can pumpkin
½ cup sugar-free prepared vanilla pudding
1 tsp. pumpkin pie spice
8 oz tub light whipped topping, ½ cup for mousse, remainder for topping
¼ cup Splenda
3 boxes (15 cups per box) Athens Mini Phyllo Shells
Optional: ½ tsp. cinnamon

Combine pumpkin, pudding, spice and Splenda. Fold in ½ cup whipped topping. Put in pastry bag or plastic bag (cut corner to pipe). Pipe into phyllo shells. Top with remaining whipped topping, sprinkle with pumpkin pie spice, or mix ½ tsp. cinnamon with whipped topping and add to pumpkin mousse tarts.
