Quick Stir Cornbread

2 egg whites or ¼ cup egg substitute
1 cup plain cornmeal
2 t. baking powder
1 cup cultered low-fat buttermilk
Non-stick cooking spray

Mix egg whites, baking powder, cornmeal and buttermilk until smooth. Pour into muffin pans which have been sprayed with non-stick spray and pre-heated in the oven. Bake at 450 degrees for 15-30 minutes.
