
The University of Tennessee Medical Center Heart Lung Vascular Institute’s Healthy Living Kitchen featured “Healthy Tailgating: Winning Recipes for the Home Team,” a cooking class for sports fans, healthy eaters and anyone interested in healthy recipes. The cooking classes are a regular program at the medical center, but the August class revved up football fans with healthy alternatives for a tailgating menu sure to please everyone.
A crowded room enjoyed the cooking lessons, health tips and, of course, a meal prepared by UT Medical Center’s Executive Chef Monty Lowans. Attendees received information on controlling their cholesterol and lowering blood pressure. The Knoxville News Sentinel featured this class in “Healthy Tailgating Fare Will Score With Fans Without Sacrificing Flavor,” including an online audio slideshow. The article includes recipes from the class and brief interviews with the instructors and attendees, including a couple who has lost weight integrating what they learn from class into their diet.
The menu from this cooking class included black bean veggie burgers, steak fajitas, spicy chicken lettuce wraps, white chicken chili, Monty’s pico de gallo with baked tortilla chips, pumpkin spice cupcakes and orange punch. 
The Healthy Living Kitchen staff includes Executive Chef Monty Lowans; Cardiac Nurse Specialist Jane Kelly, BSN, RN; and Dietitian Janet Seiber, RD.
