Looking for a healthy holiday recipe that will please your guests without all of the work? The sweet potato, a long-time holiday favorite, is packed with nutrition, including beta carotene, vitamin C and fiber. The sweet potato also is fat free and cholesterol free.

 

Sweet potatoes are full of healthy nutrients, and they taste so good! This is a no-fuss recipe to prepare sweet potatoes in a way that brings out their natural sweetness.

Servings 6

2-3 large sweet potatoes
(Peeled if desired)
1 tsp cinnamon
1 tsp dried rosemary
½ tsp nutmeg
½ tsp cardamom or ginger
Olive oil to drizzle (about 3 Tbs)

Preheat oven to 375 degrees. Cut the sweet potatoes into 1-inch cubes, and place into a 13”x 9” pan.

 

Drizzle olive oil over potatoes, then sprinkle with spices. Toss to spread oil and spices evenly over potatoes.

 

Bake for 30-40 minutes, until fork tender and slightly caramelized.

 

Serve with your favorite holiday meal.
