Chicken Satay

 

Yield: 12 skewers

Serving Size 1 skewer

1 pound boneless, skinless chicken breast
3/4 cup Dijon mustard
1/4 cup honey
1/4 cup natural peanut butter
1 t. garlic, chopped
1 t. ginger, minced
2 T. soy sauce, lite

Combine all ingredients except chicken to make the sauce. Cut chicken in 1/4 inch strips, place on skewers. If grilling or broiling chicken, soak wood skewers prior to using. Marinate chicken in 1/4 of sauce. Reserve 3/4 sauce for dipping. Cook chicken and serve with dipping sauce.
