Chocolate Banana Bread
Yield: 16 servings
1 cup all-purpose flour
1 cup whole wheat flour
_ teaspoon baking soda
_ teaspoon salt substitute
_ cup sugar
_ cup trans free margarine
1 _ cups banana, mashed
_ cup egg substitute
1/3 cup plain nonfat yogurt
_ cup semi sweet chocolate chips
Preheat oven to 350.
Lightly spoon flours into dry measuring cups; level with knife. Combine flours, baking soda and salt substitute, stirring with whisk.
Place sugar and margarine in bowl; beat at medium speed until well blended (about 1 min.). Add banana, egg substitute & yogurt, beat until blended. Add flour mixture, beat at low speed just until moist.
Place chocolate chips in a medium bowl and microwave 1 minute or until almost melted, stirring until smooth. Cool slightly. Add 1 cup batter to chocolate, stirring until well combined.
Spoon chocolate batter alternately with plain batter into an 8 _ x 4 _-inch loaf pan coated with cooking spray. Swirl batters together with a knife.
Bake for 1 hour and 15 minutes or until a wooden pick inserted in center comes out clean.
Cool 10 minutes in a pan on a wire rack; remove from pan. Cool completely on a wire rack.
