Dark Chocolate Covered Strawberries

Serving size: 1 strawberry

6 oz. Dark Chocolate
3 T Fat-free half and half 
20 Large strawberries

  1. Heat chocolate in glass bowl in microwave oven on high for 1 minute, stir, heat additional 15 second intervals until chocolate is melted.
  2. Add half and half, then whisk together.
  3. Dip each strawberry into the chocolate mixture allowing the excess chocolate to drip back into the bowl. If necessary, add additional cream to the chocolate to achieve desired coating consistency.
  4. Transfer coated strawberry to a baking sheet lined with waxed paper, repeat.
  5. Allow the chocolate to cool and then chill the strawberries until chocolate is set, about 20 to 30 minutes. Or transfer to refrigerator to allow chocolate to set.

Dark Chocolate Fondue Recipe

Use this recipe with a fondue pot to keep chocolate melted, you may need to add more fat-free half and half to maintain consistency.

  • Mix up the dippers by using other fruit such as pineapple, apples, pears, banana, kiwi or oranges.
  • Try angel food cake squares for dipping (it is lighter than pound cake).
  • To make dark chocolate dollops: melt only the chocolate, drizzle onto wax paper, top with a nut (pecans, walnuts, or almonds work well) or top with a raspberry (or other fruit). The fruit and nuts enhance the nutritional value of these chocolate delights by adding fiber, antioxidants and healthy monounsaturated fat.
