Easy Barbecue Sandwiches
Serving size: 1 sandwich
Barbecue Pork Ingredients
2-3 pound pork loin
3 onions, sliced
½ cup barbecue sauce (see recipe below)
8 whole grain rolls
Place meat in slow cooker; top with onions and sauce. Cover with lid. Cook on low for 8-10 hours or high for 4-5 hours.
Remove meat from slow cooker, remove excess fat, if any. Shred meat using 2 forks or chop meat into small pieces. Return meat to slow cooker. Stir until evenly coated with barbecue sauce.
Fill whole grain rolls with meat mixture (3 oz. meat and 2 T. sauce) before serving.
Barbecue Sauce
1 cup cider vinegar
¾ cup canned crushed tomatoes
3 Tbs. packed brown sugar
1 Tbs. Worcestershire sauce
2 tsp. hot pepper sauce
2 Tbs. chopped garlic
Combine all ingredients in a medium saucepan and bring to boil over medium heat. Reduce the heat and simmer for 20 minutes, stirring frequently.
Remove from heat and cool slightly before using. Makes 1 1/2 cups.
