Golden Sun Potatoes

2 cups quartered Yukon Gold Potatoes
1 teaspoon Extra Virgin Olive oil
1 Tablespoon of Whole Grain Mustard
1 teaspoon Fresh Parsley
Kosher salt to taste
Pepper to taste
Combine ingredients and coat potatoes with seasonings.
Place coated potatoes on cookie sheet and roast at 375 degrees for 20-30 minutes until done.
Swiss Chard and Onion
½ Tablespoon of Garlic
8 Cups of Raw chopped Swiss Chard
2.5 C. julienne Sweet Yellow Onion
1 oz white wine
½ Tablespoon of Garlic
Salt and pepper to taste
Pre heat a sauté pan over medium high heat. Add olive oil and garlic, sauté until garlic is lightly browned, about 15 seconds.
Add onions and cook to translucent, add chard and sauté for one minute or until lightly wilted.
Deglaze with wine and season with salt and pepper.
