Oven Fried Garlic Chicken

Servings: 4
Serving size: 1/4 of recipe (9.5 ounces) 

4 chicken breast, skinless, boneless
2 cups cornflake cereal
1/4 cup egg substitute
1 tsp garlic powder
1/2 tsp salt
1/2 tsp pepper
1 tbs parsley flakes
1 Tbs chili powder

  1. Preheat oven to 425 degrees. Coat a 13 x 9 inch baking dish with a light layer of vegetable or olive oil.
  2. Put cornflakes into a large plastic bag and crush using a rolling in until cornflakes resemble coarse bread crumbs. Add garlic powder, salt, pepper, parsley, and chili powder. Shake bag until ingredients are well mixed.
  3. Place egg substitute in small bowl.
  4. Coat each chicken breast in egg substitute then place in bag with the cornflake mixture. Shake until chicken breasts is covered and place in the baking dish. Repeat this step with all 4 chicken breasts.
  5. Put the coated chicken breasts into the baking dish. Place baking dish in the oven and bake for 45 minutes. Let cool for 5 minutes before eating.
