Poached Salmon
Serving size: 4 oz. salmon fillet
½ cup white wine
½ lemon juice
1 t. capers
1 t. dill
¼ t. white pepper
zest from ½ fresh lemon
1 bay leaf
salmon fillets
Mix all ingredients (except salmon) in large saucepan. Heat on medium-high heat until liquid starts to boil. Pour liquid into roasting pan or deep baking dish. Add Salmon fillets.
Place dish in preheated oven on 350 degrees. Cook 10-12 minutes or until fish flakes. Remove fish from liquid and serve.
