Roasted Garlic Spread

4 whole heads garlic
4 T. olive oil
dash sea salt

Lay each head of garlic on its side and cut off ½ inch across top. Place each head in an individual ovenproof dish. Drizzle with olive oil and cover with foil. Bake at 350 degrees for 45-60 minutes, or until garlic is tender when tested with a fork.

Using a fork, make a spread by releasing garlic from skins right onto baking dish. Stir into oil. Sprinkle with course salt. Spread onto bread, potatoes, or vegetables.
