Summertime Salad: Grilled Chicken and Strawberry Vinaigrette
Servings: 4
Salad
8 cups mixed greens
1 cup cucumber, diced
1 cup cherry tomatoes, halved
1 cup jicama, sliced
½ cup red onion
2 oz. feta cheese, crumbled
2 oz. pecans, chopped
12 oz. diced grilled chicken breast
Strawberry Vinaigrette (see following recipe)
Place salad greens in a large bowl, add all other ingredients. Toss with vinaigrette (2 T. per serving) or toss all ingredients except strawberry vinaigrette and serve dressing on the side.

Strawberry Vinaigrette
1 cup grape-seed oil
½ cup red wine vinegar
2 cup diced strawberry, reserve ¼ cup for last step
2 cloves garlic minced
2 Tablespoons honey
Salt and Pepper to taste
Add all to blender except for oil and reserved strawberries. Blend on medium and add oil in a slow stream until all is incorporated. Stir in reserved strawberries and serve.
